Dakos salad

Crunchy pieces of bread softened by the rich flavour of the tomato juice and olive oil marinate – this Greek salad is perfect as addition to any main course or as a side. You will completely forget about the dessert…
Prep time: 10 minutes
Ingredients
- 4 bread rusks or 2-3 cups of croutons
- 2 ripe tomatoes (medium in size) or 200grms of cherry tomatoes
- 40 grams of feta cheese
- ½ red onion
- 1tbspn drained capers
- ¼ cups extra virgin olive oil
- 2tbsp of vinegar
- Salt, pepper, oregano
Directions
- If you use rusk instead of croutons, crumble them into pieces
- Finely chop the tomatoes or cut cherry tomatoes in half
- Slice the onion into very thin strips
- Mix the tomatoes, capers, onion, olive oil and vinegar in a bowl
- Season the mix with pepper and salt
- Crumble the feta cheese
- Lay out the base of rusks/croutons on a plate
- Pile the tomato mix on top
- Add in the crumbled feta
- Sprinkle some oregano on top
- Let the salad sit for 10 minutes before serving
